Somali Egg Crepes

Malawah - Somali Egg Crepes

These crepes are often made for the holy day that marks the end of Ramadan

Ingredients

  • 5 tablespoons sugar
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 1/4 cups milk
  • 1 1/4 cups flour

Instructions

  1. Mix all ingredients into a smooth batter.
  2. Pour by 1/3 cupfuls onto hot, lightly greased griddle or uncreased nonstick frypan.
  3. Rotae pan quickly so bater spreads evenly.
  4. Crepes will be about 5 inches in diameter.
  5. Cook until bubbles break.
  6. Turn and fry other side.
  7. Remove to place and keep warm in oven until all crepes are fried.
  8. Roll up crepes and eat with fingers.
  9. Serve plain with sweet tea.
