- 1 lb ground sausage
- 1 small onion diced
- 1 large garlic glove minced
- 1/4 cup molasses
- 1/2 cup currants or raisins
- 3/4 cup apples diced
- 1/2-3/4 cup breadcrumbs
- 3 small or medium acorn squash
In a skillet, sautée sausage, onion, and garlic together until meat loses raw color.
Add molasses, currants, and apples. Cook for 7 to 10 minutes.
Let cool 30 mins.
Add breadcrumbs, enough to make mixture moldable and soak up juices. Set aside.
Split acorn squash in half lengthwise and scoop out seeds from cavities.
Bake or steam until just tender, about 20 to 30 minutes.
Cool enough to handle.
Stuff cavity with sausage mix and bake in a 350 degree oven for 10 to 20 minutes. Run briefly under the broiler to crust the top.
Serve with bread and salad.
