Lomi Lomi Salmon
This is a cold smoked or salted salmon salad with tomatoes and onions.
- 1 lb smoked or salted salmon
- 1 large onion minced
- 3 lbs tomatoes finely chopped
- 1 bunch green onions chopped
- 1 cup crushed ice
Soak salmon in cold water for 1 to 2 hours, changing water if salmon is very salty.
Drain and remove skin and bones.
Shred salmon with spoon or fingers and place in a bowl with minced onion and tomatoes.
Cover with a thin layer of crushed ice for about 1 hour before serving.
Add green onions just before serving.
Loni in Hawaiian means "to squeeze, crush, mash fine." It is also a massage style.
