Kālua Pig

You can make this in a kitchen oven if an imu is not available and you don't have a whole pig. For this recipe you need liquid smoke, Hawaiian or coarse salt, and some ti or banana leaves (or just aluminum foil alone). Buy a pork shoulder or pork butt.

Servings 20 people


  • 1/3 cup Hawaiian rock salt
  • 5-6 tsp liquid smoke
  • 8 lbs pork butt
  • 8 ti leaves or banana leaves, or aluminum foil


  1. Rub the salt and liquid smoke into the pork surface.

  2. Wrap the meat in ti leaves and then in heavy aluminum foil.

  3. Bake at 325 or 350 degrees for 4 hours.

  4. Serve.

Recipe Notes

You can put some water in the bottom of the roasting pan, but if you have wrapped the meat carefully, no juices will escape.

Other variations to the recipe include adding to the meat mixture a little soy sauce (1/4 cup), Worcestershire sauce (1-2 tsp), 2 cloves crushed garlic, and/or 1 piece crushed ginger.
