Dilled Okra Pickles

Servings 6 pints


  • 3 lbs of young okra uncut
  • handful of celery leaves
  • 6 cloves of garlic
  • 6 lg heads of dill including stems
  • 1 qt water
  • 1 pt white vinegar
  • 1/2 c salt


  1. Pack scrubbed okra into hot, sterilized pint jars

  2. Also put into each jar a few celery leaves, clove of garlic, and head of dill
  3. Make brine of water, vinegar and salt; heat to boiling
  4. Pour over okra
  5. Seal the jars and let stand 3-4 weeks
