Cleo's Pig Stomach (Or, Maw)

  • 1 pig stomach washed (may have to find a country butcher for this)
  • 1 lb hamburger or pork sausage broken into small bits
  • 1 lb beef round steak or pork steak cut in small cubes
  • 2 c potatoes diced
  • 2 c cabbage shredded
  • 1 c onion chopped
  • 1/2 c parsley chopped
  • 1 c celery chopped
  • 1 T salt
  • 1 tsp pepper


  1. Combine all ingredients (except stomach) and mix very well (easiest to mix by simply using your hands)

  2. Stuff into stomach (stomach will stretch considerably)
  3. Sew shut with large carpet needle and string
  4. Bake at 325 degrees for 3 hrs
  5. Do not stick with fork as it is cooking or it may explode
  6. Transfer to heated platter
  7. Slice to serve
