Chicken or Squid Lū'au

  • 6 lbs chicken thighs OR cooked squid
  • 4 tsp salt divided
  • 6 cups water divided
  • 9 lbs taro leaves washed
  • 6 cups coconut milk canned or frozen


  1. Combine chicken (or squid), 3 tsp salt, and 3 cups water in a saucepan. Simmer until chicken is tender.

  2. Bone chicken and cut into 1-inch pieces; set aside (if using squid, cut into 1/2-inch pieces).

  3. Remove stems and strip tough part from washed taro leaves.

  4. Place leaves, 1 tsp salt, and 3 cups water in a large saucepan; simmer for 1 hour.

  5. Drain and add fresh water; simmer for 1 more hour, or until bitter sting is removed from the taro leaves. Squeeze to remove excess water.

  6. Add meat and coconut milk to taro leaves; heat thoroughly and serve.
