Chicken Lū’au


Chicken Lū'au


  • 2 cups coconut milk
  • 2 lbs chicken
  • 2 tbsp oil
  • 2 cloves garlic crushed
  • 1.5 tsp salt divided
  • 2.5 cups water divided
  • 2 lbs taro leaves


  1. Prepare fresh coconut milk or use canned coconut milk.

  2. Cut chicken into bite-sized pieces.

  3. In saucepan, heat oil; add crushed garlic.

  4. Add chicken and brown.

  5. Sprinkle with 1 tsp salt and add 1 cup water. Cover and summer until chicken is tender.

  6. Wash taro leaves; remove tough stems.

  7. Place leaves in a pan with 1.5 cups water and 1/2 tsp salt.

  8. Simmer, partially covered, for one hour.

  9. Drain and squeeze water out. Drain chicken; combine with Lu'au leaves.

  10. Add coconut milk and bring to a boil.

  11. Serve immediately.
