- 2 cups coconut milk
- 2 lbs chicken
- 2 tbsp oil
- 2 cloves garlic crushed
- 1.5 tsp salt divided
- 2.5 cups water divided
- 2 lbs taro leaves
Prepare fresh coconut milk or use canned coconut milk.
Cut chicken into bite-sized pieces.
In saucepan, heat oil; add crushed garlic.
Add chicken and brown.
Sprinkle with 1 tsp salt and add 1 cup water. Cover and summer until chicken is tender.
Wash taro leaves; remove tough stems.
Place leaves in a pan with 1.5 cups water and 1/2 tsp salt.
Simmer, partially covered, for one hour.
Drain and squeeze water out. Drain chicken; combine with Lu'au leaves.
Add coconut milk and bring to a boil.
